Evelyn Marimat is a 51 year old married woman with 2 children aged 12 and 1. Her eldest child attends a local elementary school. Her family lives in the rural area of Poblacion, in the town of Oslob in Cebu province where she and her supportive husband George manage a small food shop together. Evelyn primarily sells delicious roasted chickens, known locally as “lechon manok”. Aside from this, she has also established a small cafe where the customers can eat the roasted chickens they have bought. Customers can also purchase lechon manok for their own household consumption. In order to make these products, Evelyn needs to order high quality fresh stocks of chickens and enough volume of charcoal from trusted suppliers. Her lechon manok also serves as one of the main dishes preferred for purchase during feasts and special occasions because of its special taste and flavour. This has been her family business for the past 6 years. Evelyn has been an active member of the microfinance organisation, Lamac Multi-Purpose Cooperative for 1 year and has already repaid 3 previous loans. This loan will be used to purchase additional stocks of fresh chickens and flavourings. She intends to save her income to prepare for the college education of her young children. Evelyn wishes to have a large restaurant that specialises in roasted products. She has committed to repaying the loan over three months.
